One of our family’s favorite types of food is Asian, and with the food allergies we hardly get a chance to go out to an Asian restaurant. Here’s one of our favorite recipes that I came up with so we can enjoy it at home.
Ingredients
- 1 lb Boneless Skinless Chicken
- Lettuce Leaves
- 1/4 Cup Oil (I used Coconut Oil)
- 1/4 Cup Soy Sauce
- 1/2 Cup Onion Finely Chopped
- 1/2 tsp Red Pepper Flakes(optional)
- 1 tsp. Garlic Powder or use 1 Clove Fresh Garlic Finely Chopped
- 1/4 Cup Rice Vinegar
- 1/4 Cup Brown Sugar
Instructions
- Cook the Chicken in the Oil until done
- Remove chicken and chop into small pieces
- In a Separate Bowl combine all other ingredients except onions & lettuce, stir
- Put Chicken in above Bowl and toss to coat
- Saute’ the onions for a minute in same skillet until soft
- Add Coated Chicken back into skillet and cook until warmed through
- Serve over lettuce

These sound really good, I think I’m going to try them for my husband.
